Vegan Carrot Cake Cupcakes
These are certainly a delicious vegan treat. An added bonus is that they are also gluten free! The combination of carrot and apple, together with rolled oats, almond meal and walnuts makes these cupcakes wholesome, healthy and decadent. They are topped with a whipped vanilla coconut cream for a little bit of extra decadence. You can eat these as a casual day-to-day treat or have them at a celebration.
